Veggie, goat cheese, and caper omelet

If you’ve seen some of my other recipes you would be safe to assume that I love eggs.  Something about them is so delicious and an omelet is a great way to start the morning.

I think the best kind of omelets are the one where you throw random items from your fridge in, but sometimes it’s nice to have a well thought out version.

What you’ll need:

  • 1 whole egg
  • 1 egg white
  • ½ red jalapeno, chopped into small pieces (some people don’t like jalapenos when they turn red, but I like the slightly sweeter taste)
  • Bell pepper, chopped (any color and any amount)
  • Capers
  • Goat cheese

To make: Beat the egg and egg white together until well blended.  Toss in the chopped vegetables and mix.  Once it’s thoroughly mixed together pour into a non-stick pan. [I’m a fan of ceramic pans and Cuisinart makes some great pans)  Once It’s in the pan, heat until it’s almost cooked through.  Fold over when it’s almost done and the heat from doing this will finish cooking the inside.  Transfer to a dish and top with goat cheese and capers.  Enjoy
